L’hiver revient, et avec lui le Défi de la Soupe !

Les dîners qui accueillent le Défi sont placés sous le signe de la régénération et les Osterie qui les organisent proposent des plats de récupération, issus de la « cuisine des restes », une cuisine contre le gaspillage.

Les compagnons de voyage sont les Osterie della Piana di Lucca sélectionnées par Slow Food dans son guide annuel : des établissements qui interprètent au mieux le concept de cuisine axée sur la qualité des plats, mais aussi avec une attention et une sensibilité particulières à l’accueil, afin que les convives se sentent « comme chez eux ». Choix minutieux des matières premières privilégiant le territoire et ses producteurs « vertueux », cuisine attentive à la tradition sans exclure la vocation à l’innovation, attention à l’essence et aux caractéristiques des produits et peu d’inclination à la spectacularisation : en substance, des établissements où l’on respire une atmosphère rassurante mais où l’on peut vivre des expériences gastronomiques significatives.

Au cours des soirées programmées, 4 à 5 cuisiniers s’affrontent, chacun proposant sa propre soupe que le « jury populaire », représenté par les participants au dîner, évalue à l’aide de la fiche « officielle » d’évaluation de la soupe frantoiana. À la fin du dîner, le vainqueur de la phase éliminatoire est désigné et participe de droit à l’une des deux demi-finales qui donnent ensuite droit à participer à la finale.

Ceux qui souhaitent se porter candidats peuvent contacter les organisateurs en appelant le 329 7399748, tandis que ceux qui souhaitent participer au jury populaire n’ont qu’à réserver une place à table.

La Disfida récompense ensuite les Pellegrini della zuppa, ceux qui auront assisté à plusieurs éliminatoires en accompagnant le parcours d’auberge en auberge : les pèlerins ont leur place garantie en finale et sont récompensés par un prix spécifique.

Winter is back, and so is the Soup Challenge!

The dinners hosting the Challenge are all about regeneration, and the taverns hosting them offer dishes made from leftovers, ‘leftover cuisine’ and cuisine that combats waste.

Our travelling companions are the taverns of the Lucca Plain selected by Slow Food in its annual guide: establishments that best interpret the concept of cuisine focused on the quality of the dishes but also with particular attention and sensitivity to hospitality, making diners feel at home. Careful selection of raw materials, favouring the local area and its “virtuous” producers, cuisine attentive to tradition without excluding a vocation for innovation, attention to the essence and characteristics of the products and little inclination towards spectacle: in essence, establishments where you can breathe a reassuring atmosphere but where you can also enjoy significant gastronomic experiences.

During the evenings, 4-5 chefs compete, each offering their own soup, which is judged by the “popular jury”, represented by the dinner guests, using the “official” evaluation form for Frantoiana soup. At the end of the dinner, the winner of the preliminary round is announced, who then qualifies for one of the two semi-finals, which in turn qualify them for the final.

The Challenge then rewards the Pilgrims of the Soup, those who attend the most preliminary rounds, accompanying the journey from tavern to tavern: the pilgrims are guaranteed a place in the final and are rewarded with a special prize.
