Christian: raising trout where the water is purest

The “La Jara” fish farm is located in the valley of the Turrite, near the Hermitage of Calomini.

Here they raise three types of trout: rainbow, salmon trout and albino rainbow. Besides the farming, we also have the equipment to fillet and smoke them. We are proud of this geographical position: the waters of the Turrite di Gallicano — the stream that flows nearby and feeds the tanks of the farm — are pure and fresh. “We feed our trout for 20 months,” recounts Christian, “up to adulthood, keeping them in clean, filtered water, moving them from tank to tank according to their age. When they are ready, we sell them to our customers, who are mostly the restaurants of the area, or we can smoke them here on the farm. The trout is filleted and salted; when it is ready, it is smoked for about six hours using the aromatic wood of the forests of the Calomini hermitage, and at the end of this process we vacuum-pack it, making it in effect ready for sale.”

The l’Eremita agriturismo, which borders the farm, is family-run; my brother is a good cook and a great expert on trout — his best dishes are the spaghetti with trout ragù and the famous baked trout fillet with potatoes.
