The International School of Italian Cuisine was born in 1985 from the intuition of Professor Nishimura, a prominent figure of the Japanese cultural world, who in… was awarded by the Presidency of the Italian Republic (directly from the hands of the then President Sandro Pertini) as a profound connoisseur of Italian culture. For some years now the lessons have been held in the new premises in the historic centre of Lucca.

Demonstrations and consultancy at cookery academies and restaurants in Japan, internships and professional refresher courses as a teacher in the United States, collaborations with Italian bodies and associations do not prevent Chef Gianluca Pardini, ambassador of our food culture, from coordinating and attending the Academy’s cookery courses.

Every day the Cesarine host travellers from every part of the world to offer them lunches, dinners, cookery courses and special gastronomic experiences such as tastings, aperitifs and visits to local producers. Our mission is to safeguard and share the knowledge of local traditions, recipes and hospitality.
Since 2019, Cesarine has been a widespread Slow Food community for the safeguarding of traditional Italian cuisine.

COOKING IN TOSCANA

Mauro spends hours in the kitchen experimenting, while Tze’ela usually explores the local market or the farm! She loves discovering new ingredients, getting to know them and tasting them. When she is not sourcing food, she can be found documenting her culinary travels on video.
Together they love meeting new people, cooking alongside new friends, exchanging ideas over a glass of wine and eating one dish after another in a feast.
The “from farm to table” cookery course is held at a local farm in the hills, with a splendid view of the valley, about 20 minutes’ drive from the historic centre of Lucca, and includes an entire 4-course Tuscan menu, from starter to dessert, including the preparation of handmade fresh pasta.

The menu is based on fresh, seasonal ingredients and therefore changes according to the availability of the market.
The course is also suitable for children from the age of 6.
The lesson begins at 10.00 and ends after lunch around 14.30.
